Kissed with a touch of melted butter and grilled until barely softened, stuffed with a honeyed goat cheese, then sprinkled with toasted pine nuts, cardamon, mint and more honey.
Ooo la la.
And when it comes to eating these lovelies – the fruit explodes in your mouth, slippery and juicy, melding with the sweet, creamy goat cheese. The honey sticks to your fingers, giving you no other choice than to delicately lick it off those digits.
Ohhhhh yeah. I think I hear Barry White in the background.

. . . But that could be because I forgot to turn off the grill.

Grilled Apricots with Goat Cheese
2 large apricots
1/3 cup goat cheese
1 tablespoon honey, plus more for garnish
1 tablespoon pine nuts, toasted
1 tablespoon fresh mint, chopped
butter
cardamon, for garnish
In a small bowl, fold together the goat cheese and the honey. Set aside.
Halve the apricots and remove the pit. Brush the apricots with butter and place them on a hot grill, cut side down. Grill the apricots for 3-5 minutes, until grill marks appear on the apricots.
Fill the apricots with the sweetened goat cheese mixture and sprinkle with the pine nuts and mint. Garnish with a thin drizzle of honey and a light sprinkle of cardamon.

This looks heavenly. I usually pass up apricots in the store for one of their more juicy cousins like nectarines or peaches but stuff it full of goat cheese and pine nuts and I’m in.

Here’s a snappy little variation on this goodie: since my husband does NOT like mint but LOVES bacon, I crumble a well-done slice and substituted the bacon for the mint. We were excited about the sweet-salty-creamy-crunchiness. I’m pretty sure our taste buds were doin’ a little dance inside our mouths…
